Domaine de la Paonnerie is located on the northern bank of the Loire river between Anjou and Nantes. Jacques and Agnès Carroget work their 23 hectares of Cabernet Franc, Cabernet Sauvignon, Gamay, Chenin Blanc, and Melon de Bourgogne vines biodynamically.
They started by converting the domaine to organic viticulture in 1997. Over the years every aspect of their production has gotten more natural. A number of the cuvées that they produce are made completely without sulfur additions. Generally, however, the ones that are exported have a small amount added at bottling.
