Chardonnay Seneca Lake 2012

Harvested on September 13th, the juice was pressed and put into stainless steel to ferment with only naturally present yeast. It fermented slowly for 14 months and was bottled without fining or filtration after 22 months in tank. Only 40 ppm total sulfite addition, and none at bottling, the wine is fresh and light, but with some funky Jura-like depth to it, and a bit of bound carbon dioxide.
