Sancerre Auksinis 2012

Auksinis means golden in Lithuanian. It comes from fifty-year-old vines planted in clay and Portlandian limestone and is aged for at least two years on its lees in barrels.

Sebastien farms organically, plows with a horse, has biodiversity in the vineyard, and leaves his grapes on the vine much longer than his neighbors, harvesting by hand in mid-October to achieve maximum ripeness, which means a proportion of his grapes develop noble rot.

The result: a lush, meaty yet nervy, super-flavorful Sancerre that’s absolutely unique.
