Domaine de Gimios is run by mother/son duo Anne-Marie and Pierre Lavaysse in Saint Jean de Minervois. They employ organic and biodynamic farming practices and are minimal interventionists when it comes to cellar work. Indigenous yeasts are always used and no sulphur is ever added.
Vinification: The "Rosé de Novembre" is a pet nat of Cinsault, Alicante, Grenache, Carignan and Aramon, and the white grape Muscat a Petit Grains. The wine is fermented using indigenous yeasts and is bottled right before it completes fermentation to create a natural bubble. Unfined and unfiltered. No added sulphur.
Tasting: Intensely floral on the nose. Delicate bubbles. Slightly oxidative with notes of stewed-apricots and cherry compote. All of that mingles with vibrant acidity to create something utterly unique and refreshing.
