Riesling, Pinot Gris, & Pinot Noir hand-harvested from a mixture of granitic, sandy, and stony soils all in the same parcel. The grapes are slowly pneumatically pressed without crushing. Spontaneous fermentation takes place over the course of 8 to 10 months in old neutral oak casks. Unfined, unfiltered, no additional SO2. 13%ABV
