Grenache, Merlot and a touch of Syrah from fifty year old vines planted on limestone soil peppered with large chunks of basalt.  Grapes hand-harvested and undergo whole cluster fermentation. Aged in a mix of neutral barrel (Merlot / Syrah) and stainless steel (Grenache). Blended and bottled a month later, unfined, unfiltered with no SO2.
