Established in the 1950s as a purely biodynamic operation over 7 hectares, the family estate is pure Burgundy mixed with pure Guillot. To be biodynamic for fifteen years anywhere would be a feat; to be biodynamic and sans-soufre for 70 YEARS in Burgundy is rare as rare gets. The wines are fascinating and some of the most soulful we have the privilege to carry. Rendered with unique vinification techniques like semi-carbonic (what Julien refers to as a multilayered cake) fermentation with extended élevage for the reds and a smattering of unique varieties for reds/whites/co-ferments, these wines could not be more one of a kind. He proudly farms and vinifies rare grapes from his estate in Cruzille like Pinot Fin, Gamay Petits Grains, Aligoté, Gouais (!), and Chardonnay in addition to 90 year old Gamay from pristine granitic Beaujolais soils just south of Pouilly-Fuissé.
A centuries old wine recipe created by the monks around the time of the vineyard's planting in 900AD, this is a field blend of Chardonnay, Gamay and Pinot Noir, including native varietals Gamay Petit Grain and Pinot Fin.
The grapes were hand harvested, foot crushed, vinified, aged, and finally bottled without SO2.
