"Tokaj", the true name of this grape variety, is proprietary to Hungary, so Dario and his collective have cheekily coined the Italian iteration of this grape "Jakot." From 60-year-old vines, grown on limestone and silt, with 22 days on the skins and 2 years in the bottle. The nose is melon candy (the type you can buy individually wrapped at bodegas), that gives way to perfectly ripe honeydew. The acidity is pure magic, racing across your whole mouth, with an incredibly long finish. Candied bergamot, orange blossom, and a smorgasbord of winter citrus.
