Macerated Pinot Grigio is a wonder to look at: a lava-lamp radiant salmon color. 8 days on skins, two months in a mix of old oak (including acacia) with 1 year in bottle. Immense umami in this wine, perfectly mouthwatering. The nose is Asian pear and daikon root, after a few hours, you would swear you were smelling your favorite Thai salad. The palate is viscous and textural with a finish that is yoghurt and spirit-like: I'd say it was Armagnac ice cream.
