Du Vin aux Liens, "Wait Wait Wait" Pet Nat 2021

Vanessa Letort, originally from Brittany in northwestern France, worked for some time in Alsace, hot on her own wine-seeking route. Around 2015, after several fated experiences with and exposures to natural wine and its kaleidoscopic array of bottles & people that convinced her this was the end of life she wanted to work in, Vanessa met Christian Binner of eponymous fame in Alsace’s Ammerschwihr in addition to his work in founding and facilitating the wine-collaborative project “Les Vins Pirouettes.” In fact, Vanessa was part of the original braintrust behind the concept and execution of the ambitious Pirouettes project that sought to highlight individual winegrowers who didn’t have the wider distribution of someone like Binner, thereafter releasing these wines under a “Binner & Friends” umbrella with the name “Les Vins Pirouettes.” A collective effort to illuminate the true extent of the collective, or something like that. In this way, Vanessa, venturing out on her own in 2019, started “Du Vin aux Liens” to do much of the same as Les Vins Pirouettes but to broaden the regional viticultural umbrella even further & to deepen the collaborative upshot of Pirouettes: she works with winegrowers in both Alsace and The Loire in addition to herself vinifying some wines as part of the range rather than solely being the champion of the wines that are produced under this “brand.” In this way, what we have in the share is a Pét-Nat sourced from one of her Alsatian Winegrowers given life under the “Du Vin aux Liens” line.

Alsace, France. A zippy (and mildly-explosive) pet nat of Muscat and Chasselas. The grapes see 6 days of skin contact before fermentation in stainless steel. Bottled unfined, unfiltered with no SO2. Undisgorged, so you'll want to get the bottle SUPER cold before opening. 15/20 minutes in the freezer should do it! Have a glass at the ready.
