This is a sharp, forested white that shows equal parts aromatics and texture (think Alsatian Muscat bouquet blending into Chablis’s bite) from Domaine Buronfosse working in La Combe-de-Rotalier in Southern Jura, France.
Vinification: A blend of Savagnin and Chardonnay hand-harvested from 70 year-old vines grown in calcareous clay and marl soils. These vines are farmed biodynamically. The grapes undergo spontaneous fermentation (ambient yeasts; no temp. control) in neutral oak before a variously-extended élevage. Different vintages are blended before being bottled unfined, unfiltered, with no additional SO2.
