Grenache was harvested around the same time as the Muscat d'Alexandrie and whole-bunch macerated for 2 days before pressing. Mourvèdre, the final variety in the wine, was harvested a month later in mid-September somehow not overly ripe! Whole-bunch maceration lasted for a couple days before pressing. All the separate components were then racked and blended into fiberglass (85% of the wine) and Stockinger barrel (15% of the wine). Where it rested for 6 months.
