This is a fresh and bright Red Burgundy from Marc Soyard of Domaine de La Cras who tends 8 hectares of vines on the slopes surrounding Dijon, the capital of Burgundy.
Vinification: 100% Pinot Noir hand-harvested from 37 year-old vines grown in clay-limestone soils at the En Bessy vineyard site. The grapes undergo whole-cluster, spontaneous semi-carbonic fermentation with only the help of native yeasts before maturing for 15-18 months in oak barrels of which 30-40% are new. Unfined, unfiltered, with minimal SO2 at bottling.
