About the wine

Bío Bío Valley, Chile. 100% Pais from 200 year old vines. The grapes were harvested by hand and destemmed, then fermented in open-top plastic bins with their skins. The skins are left to macerate in the finished wine for one week after fermentation, then the wine is racked to rest in old oak barrels. Unfined, unfiltered, no SO2.
