Fleurie, Beaujolais. 100% Gamay. The grapes for this cuvée are sourced from a 3.2 hectare parcel grown on granite and quartz in Fleurie (Julie's oldest vines). The grapes are fermented semi-carbonically in concrete vats, then pressed in a manual press, where the process is intentionally slow and delicate. The juices are then racked to old Burgundian barrels for élevage. Unfined, unfilterd, no SO2.
