Made from one our favorite Piemontese grape varieties but like none other that we’ve ever had. Nadia’s G-Punk is a light purple see-through purple color made from Tavijn’s basic Grignolino. Here she destems the fruit and keeps the berries whole, very gently presses them to avoid breaking the skins, and to start a natural fermentation. Maceration is two months in steel and cement tanks but with no sulfur added. It’s kept on its lees for a year, and then passed over (ripasso) the pomace or pressings from a successive vintage, which restarts the fermentation and adds more depth of fruit and body, and softens the tannins. Needs a slight chill.
