Light, bright acidity, but with tannic grip, Ottavio takes its name from Nadia’s septuagenarian vignaiolo father, who still works the vines, along with her mother (Teresa, for whom the Ruche bottling is named.).

Nadia destems the fruit but keeps the berries whole, and gently presses them so as to avoid breaking the skins and help kick off the natural fermentation. Maceration lasts a lengthy 2+ months in steel and cement tanks and it spends a few months on the lees.
