All in epoxy tank, the wine ages for 6 months before bottling unfined, unfiltered, minimal added SO2. \u003c\/p\u003e\n\u003cp\u003e. All are kept whole-cluster except for part of the Chenin that gets direct-pressed. Everything goes into an epoxy tank, including the direct-pressed juice, to ferment and macerate for one month (malolactic occurring) without pump-overs or punch-downs. The wine is then pressed for free-run juice and just the start of the pressed-off juice.
