The vineyard, called Les Fours, can be found on a south facing sandy\/chalky promontory in the town of Montgenost in the Côte de Sézanne. Grapes are organically cultivated, hand-harvested and all whole-bunch pressed together. Settled in stainless and racked to 600L barrel. Spontaneous fermentation and aging sur lie for 7 months before transfer to bottle. Aged under cork \u003c\/span\u003e\u003cspan\u003ein bottle\u003c\/span\u003e\u003cspan\u003e rather \u003c\/span\u003e\u003cspan\u003ethan crown-cap\u003c\/span\u003e\u003cspan\u003e (touch more oxidation) for 24-30 months before each bottle is hand-disgorged.
