The Details

Pinot Noir / Grolleau / Gamay from organically cultivated vines in Anjou. Grapes are hand-harvested (Pinot first; Gamay and Grolleau the next week). Pinot is directly pressed in pneumatic press while Grolleau / Gamay got 24 hour cold soak in vat prior to running off the juice. Musts ferment separately spontaneously all in stainless steel prior to blending and rest for a month or so and then bottling unfined, coarsely filtered, minimal (<20ppm) added SO2.
