Grapes are hand-harvested, directly pressed to stainless steel for spontaneous fermentation where, after several days, the juices are transferred to 225L neutral oak barrel to finish fermentation. The wine rests sur lie for 10 months in these barrels with periodic stirring. Bottled unfined, unfiltered, no additional SO2.
