Winemaker here is Dan Rinke. Grapes are hand-harvested and the Pinot\/Gruner\/Zweigelt are whole-cluster directly pressed whereas the Mondeuse and a very small percentage of Pinot separately macerate for 3 weeks whole cluster prior to pressing. Spontaneous fermentation in flextank and used barrique.
