Back-vintage - 100% Chenin Blanc from biodynamically cultivated vines in Anjou. Grapes are hand-harvested, directly pressed, and slow-spontaneously fermented for 12 months in vat. Neutral barrel for some extended aging prior to bottling unfined, unfiltered, no additional SO2.
