Grapes are hand-harvested from the old-vine plot first, macerate whole-cluster for 5 days. Young-vine harvested follows where 50% of the volume is added whole-cluster to the Aux Arbres juice and 50% of the volume is directly pressed and added to the mixture. This setup remains macerating for 10 more days before pressing.
