Valentin Morel, "Côtes du Jura, 'Les Trouillots'" 2021

Owing to the enormously difficult 2021 vintage and late frost, the three varieties of the Trouillots plot were blended into one cuvée. From biodynamically cultivated vines on clayey soils, the 2021 is 40% Trousseau, 40% Pinot Noir, 20% Poulsard (vines ~40 years-old on avg.). Hand-harvested, the grapes macerate separately prior to pressing and spontaneous fermentation in vat. Blended and aged together in tank. Bottled unfined, unfiltered, no additional SO2. 12.5%ABV
