About the wine
100% Aligoté from the 'Les Enceints' vineyard planted high above the village of Pierreclos with southern exposure near the southern end of Burgundy and its connective tissue with the Mâcon. Grapes are hand-harvested, chilled, foot-crushed and slow-pressed over 5 hours in manual basket press. Spontaneous fermentation and maturation in large concrete tank. 11 months sur lie prior to bottling unfined, coarsely filtered, no additional SO2. 12% ABV
