The Details
Vinifcation: Pet nat. 100% organic Sauvignon Blanc from vines grown on calcareous soils. Grapes are handpicked, destemmed and crushed into stainless steel. Two days of skin contact. Bottled before fermentation completes. Disgorged. Unfined, unfiltered, no SO2.
Tasting: One of our all-time favorite pet nats. Savory, cheesy, salty, with a good amount of lemony acidity and tropical fruits on the palate. Crispy bubble. Delicious and refreshing.
