The Details
From yumbel in the Bío Bío Valley of southern Chile, this is 100% old-vine (>200 years-old) País from organically cultivated vines planted to the volcanic/granitic soils of the region. Grapes are hand-harvested, manually destemmed via zaranda and spontaneously fermented in open top Raulí Beech vats. Free run juice is transferred into pipas where the wine rests for several months prior to bottling unfined, unfiltered, no additional SO2. 11.9% ABV
