A blend of red grapes that changes every year. The idea behind this wine came to Camillo as a way to make a wine like his ancestors, who would simply blend all their white and red grapes and make two wines. He does not reveal the grapes as Camillo does not feel like this wine is supposed to taste like a varietal but rather a snapshot of his land and the vintage.
Four red grapes (they change every year) are harvested at the same time, then co-fermented in stainless steel with a short maceration. Fermentation continues in bottle, creating natural carbonation.
