Their "Slopes of the Priests" cuvée is a parcellaire bottling named for the site in which the grapes are grown - close to an old pilgrimage route that led from Vézelay to Compostela. Saline, pure, chiseled -- this is the classic Chablis, one of carved rock, pulverized rock, depth and elegance from something firmly planted in the time of geology. Stunner. 12%ABV
