The Details
From Saint Chinian in the Languedoc, this is biodynamically cultivated 30% Grenache, 30% Syrah, 20% Carignan, 20% Mourvèdre. Grapes are hand-harvested from 25-30 year-old vines planted to clay/limestone/schistous soils. Destemmed and lightly crushed, grapes macerate for 4 to 6 weeks prior to pressing. Aging all in stainless steel for 8 months before being bottled unfined, coarsely filtered, minimal (<35ppm) added SO2.
