This is a subtly savory co-ferment of Gamay and Chardonnay that carries a medium body sans any true tannic grip or tension, from Alice Bouvot of Domaine de l’Octavin who tends five hectares of vines around Arbois in the Jura region of far eastern France.
Vinification: A co-fermented blend of Gamay and Chardonnay hand-harvested from 30 year-old vines grown in clay and limestone soils. The grapes undergo spontaneous fermentation (ambient yeasts, no temp. control) in tank before a short period of élevage. Bottled unfined, unfiltered with no additional SO2.
