This is the incredible Jura white you’ve been looking for: supple aromatic, long, and bone-dry from Alice Bouvot of Domaine de l’Octavin who tends five hectares of vines around Arbois in the Jura region of far eastern France.
Vinification: A blend of Chardonnay and Savagnin hand-harvested from 40 year-old vines grown in white and gray (Jurassic) marl soils. The grapes are destemmed and undergo a 1-month maceration with spontaneous fermentation in tank otherwise (ambient yeasts, no temp. control). The wine is then aged from 18-24 months in tank before being bottled unfined, unfiltered, with no additional SO2.
