The Details
Grenache, Mourvèdre, Syrah, small amounts of Counoise & Carignan from organically cultivated vines in clay/limestone soils in Cairanne, Southern Rhône. Grapes are hand-harvested, cooled down for 12 hours prior to destemming (except the Carignan which is vinified whole-cluster; Counoise semi-carbonic). Each variety spontaneously ferments separately in concrete vat. Macerations are 8-10 days. Pressed, blended, aged for 6-9 months prior to bottling unfined, coarsely filtered, minimal (<25ppm) added SO2.
