100% Gamay. Organic. The grapes are hand-harvested, direct-pressed, fermented using wild yeasts and then bottled with 15G of residual sugar for a second fermentation “sûr point” aka upside down on its crown cap (!!). This is the method that gives the wine those crispy, refreshing bubbles. The bottle is then disgorged after five months. Unfined, unfiltered no SO2.
