il Moralizzatore, "Vespaiò" 2019

Biodynamic. Veneto. 60% Vespaiola and 40% Tai Bianco. Grapes are hand-harvested, destemmed and fermented with wild yeasts in stainless steel (6 hours on the skins). Grapes are then pressed and aged in stainless steel, followed by bottling, where secondary fermentation is started via added grape must. Unfined, unfiltered, no SO2.

With a close personal and professional connection to the land and a long history of tasting the great wines of both the Veneto and Italy, they decided in 2011 to start producing chemical-free wines not far outside of the city of Padua in the Veneto."
