The Details
Biodynamic. Veneto. 60% Vespaiola and 40% Tai Bianco. Grapes are hand-harvested, destemmed and fermented with wild yeasts in stainless steel (6 hours on the skins). Grapes are then pressed and aged in stainless steel, followed by bottling, where secondary fermentation is started via added grape must. Unfined, unfiltered, no SO2.
From the importer: "Il Moralizzatore is the result of the courage and passion of two best friends, an equine veterinarian and a pharmacist - Enrico Frisone and Andrea dalla Grana. With a close personal and professional connection to the land and a long history of tasting the great wines of both the Veneto and Italy, they decided in 2011 to start producing chemical-free wines not far outside of the city of Padua in the Veneto."
