WINE ARRIVES 12/23
100% Chardonnay from biodynamically farmed vines in the heart of Montgueux - parcellaire from a proper old 'Clos.' Vines are 40+ years-old and planted to heavy clay/chalky soils. Grapes are hand-harvested and directly pressed to a combination of neutral barrels that had previously been used by Ganevat for his topped-up Savagnin, natural cognac, and some Burgundy barrels as well. 6-month fermentation is followed by blending in tank for 2 months and bottling thereafter unfined, unfiltered, no additional SO2. 6 years aging in bottle prior to disgorgement in 2023. Zero/zero.
