The Details
100% Tsolikouri, fermented with spontaneous yeast then rested in qvevri for eight months. No maceration, bottled unfined, unfiltered and with no SO2. On the nose are memories of winter candles and wet orchard trees; the palate has modest acidity, with spicy Asian pear leading into buckwheat and cantaloupe on the long finish.
