The Details
100% Babic, from 25-70 year-old vines grown just a few meters above sea level on a mixture of krast and crvenica (terra rossa) soil. (Created by the dissolution of limestone.) 6 days of maceration with wild yeast fermentation, then aged in stainless for 9 months. Tiny amount of SO2 at bottling, unfined and unfiltered. A meaty wine that makes us think of summer BBQ, but with all the trappings of a good hotdog: kraut acidity and funk, tomato leaf and char, plus a dollop of salinity on the finish. Vin de crunch.
