This is downright delicious, Friday night pizza wine that is as memorable as (if not more than!) your favorite, legendary slice in the city. From Krista Scruggs of Zafa Wines who works in Vermont’s Champlain Valley.
Vinification: This is 100% Frontenac Noir hand-harvested from vines grown in clay and limestone, with silt deposits at Elison Estate Vineyard in Grand Isle, Vermont. The grapes undergo whole-cluster semi-carbo fermentation prior to a gentle foot crushing. Fermentation and a relatively short maturation occur in glass demijohn. In order to kickstart secondary fermentation, typical of the traditional method though vitally distinct with the type of dosage, organic maple syrup is added to the still Frontenac Noir. Bottled under crown-cap unfined, unfiltered, with no additional SO2. 12%ABV
