The Details

100% biodynamically cultivated Sauvignon Blanc from one of New Zealand's best sites for the variety, the small Churton Vineyard in Marlborough tended to by Ben Weaver. Grapes are hand-harvested, 60% macerate for 7-days, 40% are whole-cluster directly pressed. Spontaneous fermentation and élevage in neutral oak and stainless steel for 11 months prior to bottling unfined, unfiltered, no additional SO2. 13.5% ABV
