This is a gorgeous, supple white wine from Sébatien Chatillon of 'Ad Vinum' who tends 5 hectares of vines in France's Southern Rhône Valley (around Tavel).
Tasting: Stone fruit and saline galore -- the perfect wine for seafood-based pasta, souvlaki, or some paella with heat -- which is to say, it is an all-around kickass white, unique in how well it pairs with a wide range of food (or, on its own is more than fine too! Cheers!)
Vinification: 100% Clairette Blanche hand-harvested from 40 year-old vines grown in sand/gneiss soils. The grapes are directly pressed into fiberglass tanks where spontaneous fermentation (ambient yeasts; no temp. control) takes place before an élevage of 12-18 months also in fiberglass tanks. The wine is bottled unfined, unfiltered, with no additional SO2. 12%ABV
