The Details

Biodynamically cultivated Chardonnay and Pinot Noir from Nelson on the northern tip of the South Island of New Zealand. Grapes are hand-harvested, directly pressed to old puncheon for spontaneous fermentation and aging of 1 year before racking to stainless steel. Refermented with the next year's base wine and bottled with 10 months sur lattes thereafter and disgorgement following. Unfined, unfiltered, no additional SO2.
