The Details

100% Chardonnay from just south of the technical border of Champagne - the parcel is surrounded by forests & prairies with no other neighboring vineyards. Grapes are hand-harvested and lightly sulfured (<15ppm) at press. Spontaneous fermentation in neutral barrel prior to 30 months aging also in neutral barrel. Bottled unfined, unfiltered, no additional SO2 or dosage. In bottle aging for 1 yearsprior to disgorgement and release.
