The Details
From the old eponymous Caibelles Serres family parcel in Pinell de Brai, Terra Alta, Tarragona from which Laureano (Alicia's father; "Mendall") has made wines in the past. Biodynamically cultivated by Alicia, the cépage is an old field blend 90% Cariñena, 10% Syrah/Tempranillo/Cabernet Sauvignon/Merlot/Garnacha Negra in clay/calcareous soils. Grapes are destemmed and macerate for 10 days prior to pressing. Spontaneous fermentation and aging for 7 months thereafter all in stainless steel. Bottled unfined, unfiltered, no additional SO2. 13.7% ABV
