The Details
Biodynamically farmed rosato from the Maremma (central, western-coastal (Tyrrhenian) Italy). 80% Carignano, 20% Alicante Nero from Ampeleia. Grapes are hand-harvested and spontaneously ferment a la flotation method (infusion) where whole-clusters of Alicante Nero macerate in the directly pressed juice of Carignano, for 12 days prior to pressing. Spontaneous fermentation and aging thereafter for 9 months all in concrete tank. Bottled unfined, unfiltered, minimal (<25ppm) added SO2.
