70% Cabernet Franc, 30% Gamay de Bouze (teinturier) from organically cultivated 50 year-old vines planted to galets roulées/silex soils in Champs-sur-Layon. Grapes are hand-harvested, the Gamay de Bouze is directly pressed, while the Cabernet Franc is chucked in whole-bunch into the rosé-Gamay juice to macerate/infuse for 10 days prior to pressing together into fiberglass tank. Spontaneous fermentation. Bottled unfined, unfiltered, no additional SO2. 13% ABV
