The Details
From vines organically cultivated in the Colli Piacentini outside of Parma in Emilia-Romagna, this is 60% Barbera, 40% Croatina from 50-60 year-old vines planted to clay soils. Grapes are hand-harvested and macerate for 15-20 days in concrete & fiberglass tank prior to pressing. Spontaneous fermentation and aging for 1 year in concrete prior to bottling unfined, unfiltered, no added SO2.
