The Details
Grolleau/Cab Sauv/Gamay from Azay-le-Rideau in the Loire Valley on 25-80 year-old, biodynamically cultivated vines planted to flinty clay/silt/loam/sand soils. Grapes are hand-harvested, destemmed, macerate for 10 days prior to pressing and blending. Aging in neutral vessel for 6-9 months. Bottled unfined, unfiltered, ~20ppm added SO2.
