The Details

100% Cabernet from 70+ year-old vines on limestone/clay soils. Grapes are hand-harvested, destemmed, and macerate for 25 days prior to pressing. Spontaneous ferment and aging for 2 years in neutral barrel. Bottled unfined, unfiltered, no additional SO2.
